Dreaded Meal Planning [Week 2]

*Disclaimer: I am a few days behind on this one....sorry!

Oh dear. I have a love/hate relationship with this whole meal planning thing. I worked so hard last week to plan our our meals and we ate 2 of those meals. The rest of the week we were on full on "wing" it mode! I know, terrible.

On a brighter note, I did get to go grocery shopping alone...yes, ladies....alone. No husband. No screaming child. Pure bliss. I was standing in an aisle with screaming kid toting moms on each end when it happened....the moment I realized I was in the grocery store, shopping...and alone when I busted out in full on happy dance & watched those screaming kid toting moms stare in envy and disgust. If you are a mom or parent at all for that matter you know what a blissful situation this really is. And it rarely happens, so I took full advantage!

I didn't have to do a lot of "planning" this week, as there were 3 meals that I planned for last week that we didn't bother to eat. So the groceries were already bought and those recipes were already prepped. Jacob is also having surgery this week so there will be a few nights of grabbing the boxed goodness from the pantry saved over for "emergency easy meals" to give this [have to nurse my baby boy] mommy a break.

Don't forget we are such the family that eating lunch and breakfast together in our house, no matter how hard we try, almost never happens so there are the usual suspects stowed away in the pantry for those occasions should we be able to squeeze in some quality time at the breakfast/lunch table together...ever.

The menu for this week includes:

Monday: Green enchiladas (my specialty) with rice and beans (a pantry clean out meal)
Tuesday: Rosemary chicken & potatoes (emergency meal)
Wednesday: Shake & bake chicken with stuffing and corn (another emergency meal at its finest)
Thursday: Parmesan crusted tilapia & steamed veggies with loaded mash potatoes (from last weeks menu)
Friday: Sante Fe chicken packets with chips & salsa (from last weeks menu)
Saturday: Slow cooker chicken & rice (from last weeks menu)
Sunday: Crock pot taco soup from Cafe Zupas

Now, lets see if the trend of not following through stays on the agenda this week?! There could be some additions and changes to Wednesday as we have to fill Jacob up really good before midnight! We could be making cookies and pancakes instead of any of this mess and eating donuts for breakfast, lunch, and dinner.
